Let’s Make Culurgiones
"Culurgiones are a type of ravioli typical of a particular region in Sardinia. The dough is made from
semolina flour, white flour, water and salt. The filling is commonly made with boiled potatoes, olive
oil, pecorino cheese, garlic, mint. Making culurgiones is an easy process of mixing white flour,
semolina flour, water and pinch of salt. To give it a circular shape the dough is rolled out and cut
into rounds. The filling is placed between both sides and sealed, ready for the pot."

About the Sardinians
Stefano & Valentina are natives of Sardinia, one of the two major islands of Italy, and
are scientists working at Rocky Mountain Laboratory. Sardinia is well known for its beautiful
beaches, sun, friendly people, and amazing food. In this 3 part mini cooking series, Stefano and
Valentina will demonstrate how to prepare 3 traditional Italian dishes, first courses, including one
of the most famous ravioli made only in Sardinia. Sign up for an individual class or all three!
